In the great state of Texas, we enjoy the most amazing Mexican food dishes! My family celebrates Christmas Eve with a combination of fabulous Mexican food and our King Ranch Casserole. Our serving table features tamales, a crock pot of the best pinto beans ever, Mexican corn bread, fresh guacamole, chips & dips, flour tortillas, and a crispy taco bar featuring fajita steak, chicken, shredded lettuce, tomato bits, fresh tomato salsa, pico de gallo, sour cream, crispy taco shells, and a plethora of shredded cheese varieties. BUT, it’s the dessert bar that features the most indulgent delicacies. Mexican Wedding Cookies, Mexican Wedding Cake, and a traditional family favorite – Mexican Churros – are always served!
I’ve always made Mexican Churros from scratch, but when I discovered the “Do It Yourself Churro Kit,” I gave it a try! I can tell you my family loved the Churros and I loved the time I saved to prepare this family favorite! The origin of Churros is an international journey. Some culinary historians claim the concept of this pastry originated in China and was brought to Europe by Portuguese explorers and merchants who acquired new culinary techniques during their travels. The new pastry was soon introduced to Spain and Spanish chefs modified the preparation of Churros by extruding the dough through a star-shaped nozzle, rather than pulling the dough and twisting it into shapes.
Some culinary historians claim that Spanish shepherds originated the Churro as they substituted Churros for fresh baked goods. Instead, the shepherds made a type of Churro paste to create Churros which they fried in an open fire during cold nights spent in the mountains.
It was Spanish explorers and merchants who later brought Churros to Mexico and the delicious, sweet treat migrated to the U.S. as Spanish and Mexican settlers and priests moved north into territories known today as California, Arizona, New Mexico, and Texas. ‘
The most amazing evolution of Churros is seen in the creation of Mexican variants. Some of the most popular Mexican variants include churros filled with fresh cheese, including cream cheese. Other versions of churros are rolled or sprinkled with cinnamon and sugar. Churros are also made with blackberries, chocolate, dulce de leche, honey, guava, and even ice cream and chocolate chips! One special Mexican variant is known as Cajeta de Celaya, a confection of thickened caramel made from caramelized goat milk. Cajeta de Celaya is regarded as a specialty in the city of Celaya located in the state of Guanajuato.
